What Shore 80A Silicone Actually Means, and Why I Chose It

When I started designing the Peace Dough Whisk, I thought choosing a material would be the easy part. Pick silicone, move on. It turned out to be one of the longest decisions of the whole project, and it taught me more than almost anything else about how kitchen tools get made.

Here is what I learned, in plain language, and why I landed where I did.

The number is a hardness rating

Shore 80A does not mean "80 percent good." It is a measurement of hardness on a scale called the Shore durometer scale, and the A tells you which version of the scale is being used. The A scale covers flexible materials: rubber bands, shoe soles, silicone spatulas.

Low numbers on that scale are soft and floppy. A gel insole is around 20A. Higher numbers are firm. A hard hat sits near the top.

At 80A, silicone is firm enough to hold its shape under pressure but still has a little give. Press your thumbnail into it and you will leave a mark that springs right back.

Why firmness mattered so much for a dough whisk

A dough whisk works by cutting through wet, heavy dough. That is a completely different job than folding batter or scraping a bowl, and it asks something different of the material.

Softer silicone, the kind most spatulas use, feels lovely in the hand. In sourdough it flexes away from the dough instead of moving through it, and you end up pushing the dough around the bowl rather than mixing it.

Go too hard in the other direction and the tool stops feeling like a kitchen tool. It also loses the quiet advantage silicone has over bare metal, which is that it will not scratch a ceramic bowl or clang against the sides at six in the morning.

80A is the point where the whisk stops fighting you. It moves through a stiff dough without flexing, and it is still gentle on your bowls and quiet in your kitchen. That balance is the whole reason the number is what it is.

Food-grade, and what that involves

Silicone intended for food contact gets tested, and the standards behind that testing are worth knowing by name.

FDA 21 CFR 177.2600 is the United States regulation covering rubber articles intended for repeated use with food. It sets limits on what can migrate out of the material into what you are eating, and it requires testing with both water and fatty foods, since some substances move more readily into oil than into water.

LFGB is the German food safety standard, and it is generally considered the stricter of the two. It adds a sensory test, meaning the material is checked to confirm it does not transfer any taste or smell into food. That test is the difference between silicone you never think about and silicone you notice.

I went looking for both, because a manufacturer willing to certify to the stricter standard is usually telling you something about the rest of their process too.

One piece, no seams

The other decision that took time was construction. The whisk is a single continuous piece rather than parts joined together.

Seams and joints are where batter gets trapped, and they are where tools eventually come apart after a few hundred washes. Solid construction costs more to tool and more to produce. It also means there is nothing to loosen, nothing to catch, and nothing hiding under a collar when you rinse it.

Where I ended up

The Peace Dough Whisk is made from food-grade silicone at Shore 80A hardness, formed as a single piece. Firm enough to work through the stiffest sourdough, soft enough to keep your bowls unscratched, and built to still be in your drawer in ten years.

It took longer than I expected to get there. I would do every round of samples again.
